These unique animals were Grass Fed right here in Bervie. Although Water Buffalo are more commonly raised in Italy and Asia, there are only a small number of farms in Ontario. The River Water Buffalo is primarily a dairy animal. The rich milk is used to make ‘Mozzarella di Bufala,’ a specialty Italian cheese.
The Meat is comparable to beef, with a softer texture, less marbling and a deeper flavor. Due to the lower fat content it is best prepared medium to rare to prevent drying out. You can enjoy this lean, red meat in any dish that calls for beef.

Cooking with Water Buffalo
Similar to cooking Grass fed beef or any other low fat meat option, Water buffalo must be cook Low and Slow. Finish cooking at rare to medium to prevent the meat from drying out and don’t forget to let it rest after you remove the heat. This gives time for the juices to reabsorb into the meat before cutting.
When roasting the best cuts, (prime rib and sirloin roasts,) sear them at 500F for 20 min and then reduce the temperature to 275F. Cook uncovered until the internal temperature reaches 160F. If you are roasting a Sirloin tip, round or cross rib roast, follow the same process except add some moisture to the pan and cook covered.
For slow roasting cuts like blade, chuck and bottom round roasts, the crock pot is a great option. You can cook from frozen on low for 8-12 hours. Be sure to add about a 1/2 cup of moisture to the pot.
